Head Chef Marcus Turner has focused on produce and flavours ideal for the new spring menu.
After a cool winter, people are looking to enjoy the energy spring has to offer, by sourcing the best, fresh, local and in season produce.
“We have really improved the depth of the wine list to match the calibre of the food,” says Nicole Blums, Food and Beverage Manager. There is more tribute paid to Australian viticulture and regions, a greater variety of wines by the glass and a select offering of unique wines and current vintage champagne.
